A traditional feast!

ITC Kakatiya has launched Bohri Food Festival as a part of the Kitchens of India initiative. Master Chef Ismail Khan, who spearheads the festival menu says it's important to begin the meal with sweet like the Bohris would do. On a daily basis, it is usually the ice cream and on special occasions, it is sweet rice Sodannu.

Bohris are rice eaters and they eat in a group from the same thali or plate and that goes for the main course and ice cream too. The cuisine is also high on cheese and baking that is an indication of the historical influences.

Some of the typical dishes on the promotion menu includes Dabba Ghosh, which is like a total meal unto itself using meat and a bit macaroni, veggies, etc and baked. Sauce Murghi on the other hand, as the name suggests is about chicken and tomato sauce. Cheese Paratha and Cheese Roll, Chicken Fry and Crispy Chicken are popular at the street food counters serving Bohri food. The food festival at Deccan Pavilion in ITC Hotel Kakatiya features all these dishes and more like the Subz Korma, Moong Dal and Mutter Paneer for the vegetarians. The Bohri style Murgh Biryani that uses potatoes and the Haleem minus the lentils. Bohri food is available on dinner buffets till July 10 at Deccan Pavilion.
