Peanut Rice: A Simple Yet Tasty Rice Recipe For Your Lunch

Ingredients Needed
For Peanut powder
• Peanuts - 1/2 cup
• Urad dal - 2 tsp
• White Sesame seeds - 2 tsp
• Red chilli - 6
• Dry grated Coconut - 2 tbsp
For Tempering
• Gingelly oil - 2 tsp
• Mustard seeds - 1 tsp
• Peanuts - 1 tbsp
• A few Curry leaves
• Rice
• Salt to taste
• Ghee - 2 tsp
Process
• First, you need to make the peanut powder; take a pan and heat the oil... now goes in the peanuts, urad dal, sesame seeds, red chillies. Dry roast them until they turn golden brown. Now add the grated dry coconut and saute for a few minutes. Spoon it out and after the concoction gets cool down, blend it into a coarse powder.
• Now you need to go with tempering… Heat the oil and add mustard seeds; after they crackle add peanuts and curry leaves. Saute them for a few seconds and add the tempering to the cooked white rice which is spread in a bowl.
• Mix well and add in the peanut powder, salt and a little bit of ghee. Mix well and dish it out.
Serve hot with papad and enjoy the tasty 'Peanut Rice' happily with your family…
