Microwave is one of the easiest cooking tools to use and these recipes are so easy and quick, even kids can make it!
Chocolate Fudge
Ingredients
- Semi-sweet chocolate chips 300gms
- condensed milk 1 tin (390gms)
- Nuts 3/4 cup
- vanilla powder or essence 1 tsp
- peanut butter or any other unsalted butter 1 tbsp
Method
- Line a square dish with foil.
- Combine chocolate chips and condensed milk in a microwave safe bowl.
- Bake on high, 100 percent power for 2 minutes.
- Stir in nuts, softened peanut butter and vanilla powder.
- Stir with a rubber spatula for 1-2 minutes, pour in to a prepared square dish, refrigerate for 2 hours.
- Lift from pan, remove foil.
- Cut into square pieces.
Don’t stop at just one!
Pistachio Fudge
Ingredients
- Powder 1/2 cup of pistachios (mix pistachio powder with other ingredients)
- Milk 1 cup
- Milk powder 1 cup
- Condensed milk 1/2 tin
Method
- Microwave this mixture for 2 minutes.
- Stir well and again microwave for 2 minutes.
- Repeat this till the mixture becomes dry and grainy enough to spread. It took me approximately 8 minutes.
- Spread evenly on a greased tray and let it cool.
- When it comes to room temperature, refrigerate for an hour.
- Cut into desired shapes and serve.
Chocolate cake
Ingredients
- Plain flour 1 cup
- Baking powder ¾ tspn
- Soda bicarbonate ¾ tspn
- Cocoa powder 3 tbspn
- Soft butter 100 gms
- Powdered sugar 3 tbspns
- Vanilla essence 1 tspn
- Sweetened condensed milk 1/2 tin
- Milk 1 cup
Method
- Mix all ingredients together and pour in a glass dish (approx. 9×9 size).
- Line with non-stick baking paper heat on high in microwave for exactly 6 minutes.
- To make the ganache melt approximately 2 tbspn of chocolate chips in ½ cup of fresh cream in a double boiler.
- Spread over cake once it’s done, and sprinkle whatever toppings you like.
Chocolate Strawberry Cake
Ingredients
- Yoghurt 1 cup
- Oil 1/2 cup
- Sugar 1/2 cup
- Flour (maida) 1 cup
- Baking powder 1/2 tsp
- Sodium bicarbonate 1 tsp
- Vanilla essence 1 tsp
- Cocoa powder 1/4 cup
- 7-8 strawberries (sprinkle some sugar on the cut strawberries and microwave for 30 seconds so they become mushy) for the chocolate sauce
Method
- Mix together 1/2 cup icing sugar, 1 tbsp cocoa powder
- and a little water
- Mix sugar, yoghurt, vanilla essence and oil till the sugar dissolves. Sieve the dry powders together and mix in slowly to the wet mix with a spatula.
- Grease a microwavable glass dish and pour half the mixture, drop in the strawberries and pour the remaining mix.
- Cook in the microwave for exactly 6 minutes.
- Once the cake cools, coat it with chocolate sauce and garnish with strawberries.
