Dum ke roat (also referred to as rote), are baked/cooked on dum, these are sweet and crispy sooji and maida flat cookies kind of delicacies made in Muharram. These are crunchy from the outside, but soft inside that melts in your mouth. This confectionery has the all goodness in them, including dry fruits, khoa, exotic saffron, and glorious ghee.
Recipe of Dum ke Rote
Ingredients:
All-purpose flour / Maida – 4 cups
Fine Semolina/Sooji – 2 cups
Granulated Sugar – 4 cups
Almonds – 1 cup
Pistachios – 1/2 cup
Cashews – 1/2 cup
Raisins – 1/2 cup
Saffron threads – 2 pinch
Cardamom powder – 1 tsp
Baking powder – 1 1/2 tbsp
Khoya – 1 cup
Ghee – 2 cups, warmed
Warmed Milk – 2 cups or as needed
Method of preparing Dum ke Rote
Soak the dry fruits almonds and Pistachios overnight in cold water, next morning peel the skin and slice them neatly. Please don't soak raisins. If you are too busy boil them till they get smooth and then peel them.
In a mixer, add the khoya and the warmed milk and blend to a smooth paste.
Take a big mixing bowl, add sooji, maida, sugar, baking powder and cardamom powder, mix all these ingredients. Now add ghee and few nuts that you pealed and mix it well. Knead to make the dough. Cover this dough and allow it to rest for at least one hour. Later, check the dough, if you feel it needs to get softer, knead it again till it becomes supple and leave it for one more hour.
Now you can start preparing the roat, but before that preheat oven to 185 C. Please make sure that the dough is sticky enough, grease your palm with ghee and flatten them into (roat) cookies like shape, it should be at least around 6 inches in diameter and arrange on a greased foil-lined baking sheets. Ensure that you leave a minimum of 2-inch space around each roat. Gently press few sliced dry fruits that you have with you on top of each roat.
Hold on! Please wear your oven glove and place the baking sheets in the oven and bake for around 10-15 minutes. You should find the sides and base are nicely browned. Now, straightaway switch to broil on low setting for 2-5 minutes until the toppings get a bit brown and the nuts are toasted. Now allow it to cool.
Now you can remove the baking sheets from the oven. Make sure that they are cooled down before you store them. Please store them in an airtight container at room temperature, so that you can enjoy the tasty, crispy roat whenever you want to eat.
