Pithapuram: Cheese that is made of cow’s or buffalo’s milk is an all-time favourite for people in general and children in particular in the two Telugu States. The aroma of fresh cheese made with jaggery and pepper attracts everyone. People in the urban areas look forward to taste the cheese which is available only after the cow or buffalo gives birth to a calf.

Cheese is made of colostrum also called foremilk or the first milk of cow or buffalo or simply ‘junnu’ in Telugu. Generally, the foremilk is available during a particular season. However, Challavari Street here is famous for its availability throughout the year. One could witness the permanent boards advertising the sale of foremilk on the street. There are at least thirty such sale points on this street alone.

At least one thousand heads of cattle are brought here to the weekly cattle sale market every Saturday from the four districts of East and West Godavari, Visakhapatnam and Vizianagaram. Generally people sell the pregnant cows or buffaloes and the buyers also prefer it as it is the right time to know how much milk the cattle yields.

Most of the cattle give birth to calves during the weekly market here. And that is the reason why foremilk is abundantly available in the town. The farmers who purchase the cattle sell the milk in the town itself, of course, for a premium. The local traders, who bought the foremilk from the farmers, store the same in the deep freezers and sell it to the consumers at the rate of Rs 200 to Rs 300 per litre.

Since the foremilk could be purchased every week during the cattle sale market, fresh foremilk is available round the year. For every litre of foremilk, the consumers need to add two litres of full cream milk or fresh undiluted milk to prepare cheese. The fresh milk should be undiluted to prepare thick and delicious cheese. The fresh and undiluted milk is also available for the consumers at the weekly cattle sale market.

Doctors say that cheese is good for health since it contains Vitamin A, B12, D and B along with phosphorous, zinc and calcium. Cheese strengthens the bones and teeth. It would also help reduce and control blood pressure.
