Ingredients

Bread 6 slices, brown ends removed

Pasta/ tomato sauce 1/4 cup

Assorted vegetables ½ cup

Mozzarella or any other melting cheese ½ cup

Fresh or dried herbs like basil to taste

Olive oil 1 tsp

Salt and pepper to taste

Method

Make the topping first: Chop all the vegetables (like zucchini, carrot, bell peppers, mushrooms etc) into a similar size, keep them small.

Heat the olive oil in a pan and toss in all chopped vegetables and saute on a medium flame for 2-3 minutes until they are wilting. Turn off the heat and add salt and pepper to taste. Set aside.

Heat the oven to 180 C. Take a rolling pin and lightly flatten the slices of bread with it.

Shape each slice into a cup and place in a muffin pan.

Lightly brush with butter or spray some oil onto the cups.

Bake at 180 C for 5 minutes or till crisp.

Spoon in some tomato / pasta sauce and add one heaped tablespoon of the vegetables to the cup. Top with shredded cheese and bake for another 4-5 minutes or till the cheese has melted.

Garnish with a fresh basil leaf and serve hot.
