A trifle is a layered dessert with cake, fruit and custard. Since this is a summer ready trifle, skip the custard and slap on the airy delicious whipped cream instead.

Ingredients

Vanilla cake 2 cups

(use store bought or homemade)

Assorted fresh fruit 2 cups

(use seasonal fruit like mango, peach, figs and cherries)

Pineapple or orange juice ½ cupHeavy whipping cream 1 cup

Method

In an 8 inch deep glass bowl or 4-5 individual dessert cups, crumble the cake and add about 1 inch to the bottom of the serving vessel.

Sprinkle the juice over the crumbled cake to moisten but do not make it soggy.

Add layers of fruit evenly, all the fruit should be cut to the same size for ease.

When all the fruit has been layered, beat the whipped cream to stiff peaks, add a few teaspoons of icing sugar (optional) and / or essence (optional). Transfer this to a piping bag with a piping nozzle and pipe a layer of whipped cream onto the dessert evenly.

Chill for at least 4 hours before serving.
