A culinary experience in its own right, the renowned Arcot Gosht Biryani made from the most succulent meat with a hint of saffron, the dish is one to look forward to. Chef Abdul Quddus gathered secrets straight from the royal kitchens of the Nawab during his one-month stay at the Amir Mahal.

When it comes to the starters, one should try the rich and flavourful Kolsa Kebabs, which are stuffed and fried on a pan. Gravy is a must with roti; Murgh Sahi Khorma and Jhinga Lal Baingan are two dishes that have thick, silky gravy. What makes one wonder is what the ‘Lal Baingan’ refers to.

The Chef explains that it means tomatoes, which attained its name over generations, and are an essential part of their gastronomical fare. No meal is ever complete without a delectable spread of desserts, which includes the Double Ka Meetha, Roomani Ka Sevaiyan and the ever-popular, Makkan Peda that originates from this town.

The Makkan Peda which looked like Gulab Jamun certainly tasted even better. Try the Nawabi khana, right from the famous princely house, and savour the myriad of spices and fabled ingredients that make this dinner buffet magnificent.
