Celebrating two decades of culinary excellence, the Culinary Academy of India (CAI) ventured into creating culinary history by creating the world’s longest cold meat platter.

About a 100 chefs working for 800 man-hours with 300 kg of meats created life-size butter sculptures, intricate vegetable and fruit carvings and presented it amidst a Christmas themed décor at the CAI premises in Begumpet.

With 30 ft in length and 8 ft in breadth, the platter had a humongous variety of meat ranging from buffalo, lamb to chicken turkey, to lobsters, prawns and salmon.

Displayed in the form of classical pate’s, terrine’s, galantines, Pate en Croute, toulade, Meat Loaves and other classical forms of cold cuts, the setup was presented elegantly with appropriate centrepieces, garnishes, sidings and borders.

Live-sized butter and chocolate sculptures with elaborate and intricate carvings complementing the platter left the visitors flabbergasted.

Created after a month of careful planning, co-ordination and determination, the platter defined the vision of the staff and students of CAI. Gustav Gropp, Principal, Oakridge International School was present at the event.
