Schezwan Paneer Fingers
Ingredients:
Paneer - 200 gms, chopped into 1/2 inch pieces
Maida (Plain Flour) - 100 gms
Corn Flour - 100 gms
Ginger Garlic Paste - 3 tblsp
Onions - 2, finely chopped
Green Chillies - 4, chopped
Dry Red Chillies - 1, finely chopped or ground coarsely
Soy Sauce - 1 to 2 tsp (adjust as desired)
Vinegar - 1 to 2 tsp (adjust as desired)
Curry Leaves - few
Oil for frying
Salt as per taste
Black Pepper Powder as per taste

Method:

  • Combine the maida and corn flour in a bowl.
  • Add salt, enough water and mix well.
  • Add vinegar and soy sauce.
  • Heat little oil in a pan over medium flame.
  • Add ginger garlic paste, green chillies, pepper powder, onions, dry red chillies, curry leaves and stir well.
  • After a minute remove from flame and add to the batter.
  • Mix well.
  • Heat oil for deep frying in a pan.
  • Dip the paneer fingers in the batter.
  • Fry until crispy and golden brown.
  • Remove, drain excess oil and serve hot with sauce or chutney of choice.

Paneer Chaat
Ingredients:
Paneer - 100 gms, cubed
Green Chutney - 1/2 cup
Coriander Leaves - 1/4 cup
Mint Leaves - little
Salt as per taste
Cumin Seeds - little
Green Chillies - 1 or 2
Lemon Juice as per taste
Chaat Masala Powder - little
Butter - little
Mango - 1, small, finely chopped
Toothpicks

Method:
Mix the green chutney, mint leaves, salt, cumin seeds, green chillies and coriander leaves in a bowl.
Add the paneer pieces and lemon juice. Mix well.
Keep aside for 30 minutes.
Heat butter in a pan over medium flame.
Insert a toothpick into each paneer cube and place it on the hot pan.
Cook on both sides for a minute or until golden and remove.
Transfer to a serving plate.
Sprinkle chaat masala powder and garnish with the mango pieces.
Serve at once.

Paneer Bajji
Ingredients:
Paneer - 500 gms, sliced into 3/4 inch sticks
Gram Flour - 2 cups
Maida - 2 tblsp
Rice Flour - 2 tblsp
Red Chilli Powder - 4 tsp
Cumin Seeds - 1 tsp
Oil as required
Salt as per taste

Method:

  • Combine the gram flour, maida, rice flour, red chilli powder, cumin seeds and salt in a bowl.
  • Add little water and mix well to a bajji batter consistency.
  • Heat oil in a deep frying pan.
  • Dip the paneer pieces in the batter and gently slide them into the hot oil.
  • Fry until light golden brown.
  • Remove and drain excess oil.
  • Serve as a snack with chutney or ketchup.
