Champagne Trifle

Ingredients

  • Chocolate Cake - 200 gms (readymade)
  • Strawberries - 1/2 cup, chopped
  • Champagne - 3/4 cup (or Sparkling water for a non-alcoholic version)
  • Water - 1/4 cup
  • Eggs - 2
  • Sugar - 50 gms
  • Corn Flour - 1 1/2 tsp
  • Vanilla Extract - 1/2 tsp

Method

  • Cut the cake into small pieces.
  • Combine the champagne, water, eggs, sugar, corn flour and vanilla extract in a bowl.
  • Whisk well.
  • Heat a pan of water over medium flame.
  • Place the bowl over the water, but ensure the bowl does not touch the water.
  • Whisk well until thick and remove from flame.
  • Allow it to cool.
  • Add some of the cake and stawberries to a champagne glass (or any serving bowl).
  • Top up with the champagne custard and keep it in the fridge if required.
  • Serve.

Mocha Mousse

Ingredients

  • Instant Chocolate - 50 gms
  • Cold Milk - 1/2 cup
  • Strong Coffee - 2 tblsp, chilled
  • Sugar - 1 to 2 tblsp, powdered
  • Vaniila Extract - 1/4 tsp
  • Whipping Cream - 1/2 cup, heavy
  • Choco Chips - 1 tblsp, for garnish

Method

  • Mix the instant chocolate, milk and coffee until thick.
  • Beat the cream, sugar and vanilla until soft peaks form. Reserve some for topping.
  • Mix the cream mixture into the chocolate mixture and spoon into a dessert glass.
  • Keep it in the fridge for 35 to 40 minutes.
  • Just before serving, add a litte bit of the reserved cream mixture and garnish with the choco chips.
  • Serve chill.

Passion Fruit Souffle

Ingredients

  • Passion Fruits - 2, chopped
  • Caster Sugar - 2 tblsp
  • Custard - 75 ml, available ready-made
  • Egg Whites - 2
  • Icing Sugar - 1/2 tsp
  • Butter as required

Method

  • Mix the passion fruits with the custard.
  • Grease 2 ovenproof tins with butter and coat the insides with caster sugar.
  • Whisk the egg whites with the remaining sugar till stiff peaks form.
  • Add them to the passion fruit mixture.
  • Divide this into the 2 tins and place them in a preheated oven at 200C/400F.
  • Bake for 5 to 8 minutes or until golden.
  • Sprinkle icing sugar on top.
  • Serve at once.
