From the habit of eating while travelling, food lovers now-a-days, travel to eat food. And that includes the food joints that are waiting to be explored on the highway. One such highway that is nothing short of a foodie paradise is NH1 passing through Haryana, Punjab and Delhi, touching upon a portion of Kashmir too.

One such highway that is nothing short of a foodie paradise is NH1 passing through Haryana, Punjab and Delhi, touching upon a portion of Kashmir too.

Recreating the delights of NH1 is Chef Rishi Manucha from Taj Deccan, who conceived a menu that would be served on alacarte at Spice Junxion and include the popular starter dishes like the Tangdi kebab, Ambarasari macchi, Lashoomi paneer tikka and Tandoori chicken, and the not so widely known Kashmiri Kabargah – fried lamb ribs.

To begin with the splashes of highway dhaba look have been added to the restaurant décor. Delicious Aam Panna as is the wont of the season is served or you can choose the quintessential dhaba styled lassi in a tall steel glass. On the starter menu, 10 on 10 points go to the Tandoori chicken yummiliciously coated with spices and baked to perfection in the tandoor followed by the Amritsari fish fry (also called Ambarasari) coated with spices and besan before frying that exudes delicate flavour of ajwain.

Interestingly, most of the dishes served on the NH1 highway are prepared in tandoor and according to the chef not so spicy either. The regulars like Rajma masala, Paneer butter masala, Ajwaini bhindi, Dal fry have been included on the menu, ofcourse; but it is the not so well know ones – Rogani prawn made using onion and yoghurt, Gosht aur shalgum ki tari, Amchoorwaley karela, that are exciting to try along with some rice or aloo kulcha.

There is also the Khamiri roti, which is so delicious that, it can be had with just some aamkaachar (mango pickle). There is ghevar on the dessert menu – not so excited – never mind – the chef has made this Pan ka mitha (Betel leaf layered with Pan masala like meetha etc and filled with icecream, folded and served frozen – a perfect end to a heavy meal.
