Tofu and banana oatmeal with soy milk and dates

Ingredients:
Oats 200 grm
Soy milk 500 ml
Ripe banana 1 nos
Tofu -diced 100 grm
Dates 25 grm
Honey To taste

Method:

  • Heat the soy milk.
  • Add the oatmeal at one go and cook the oatmeal over a simmering flame, stirring constantly, till the time the porridge thickens and coats the back of the spoon.
  • Add chopped banana and cook for few minutes.
  • Add tofu dices and bring to boil.
  • Serve hot with garnished with dates and honey.
  • Serving – 4 portions.

Tofu and Tomato Upma

Ingredients:
Semolina (Rava) 100 grm
Ghee 25 gml
Black mustard seeds 1 nos
Dry red chili 1 grm
Fresh tomato 50 grm
Tofu 100 gms
Turmeric powder 2 gms
Fresh coriander 15gms
Salt to taste

Method:

  • Dry roast the semolina on a low flame until it turns slightly brown in colour. Keep aside.
  • Cut tofu and tomato into small dices and keep aside.
  • Heat the ghee in a wok and add the tempering of mustard seeds, red chillies and curry leaves.
  • Once they begin to splutter add the tomatoes and saute for a few minutes.
  • Now add the turmeric powder.
  • Add around 200 ml of water.
  • Mix in the broiled semolina in a thin stream mixing continuously taking care to avoid the formation of lumps.
  • Cook till the upma begins to splutter. This would take around 10 minutes on a medium flame.
  • Add diced tofu and mix well.
  • Finish with salt and chopped coriander.
  • Serving – 4 portions.

Raspberry and tofu muffins

Ingredients:
Butter 700 grm
Sugar 900 grm
Egg 5 nos
Flour 250 grm
Baking powder 5 grm
Vanilla essence 2 drops

Method:

  • Beat butter and sugar together.
  • Gradually add one egg after another and beat well.
  • Mix the flour with baking powder and add it to the batter.
  • Pour the mixture on muffin moulds and top up with tofu and raspberry
  • Bake at 175 oC for 15 mins.
  • Serving – 30 nos.
