Extremely healthy, these moong beans have immense health benefits that are compounded when sprouted. In fact, there is only a minimal trace of vitamin C in the moong bean – which is abundant in its sprouts! This holds true for other vitamins, such as vitamins A, B and E as well.
Moong sprouts contain folic acid. This is a type of vitamin B and it helps promote normal cell growth as well as protein metabolism, in addition to RBC formation and overall healing processes. Folic acid works in tandem with another vitamin B, thiamine. This vitamin is crucial in guaranteeing a smoothly functioning nervous system. Thiamine also aids a steady release of carbohydrates, a process which provides more energy for a longer period of time, rather than a coffee or a sugar rush.
