Chef Jitender Singh Sodhi from Punjab was flown in for the festival to take Hyderabadis to a gastronomic journey to the roadside food of hinterlands by serving a number of delicacies to foodies with varieties of veg and non-veg delicacies; with the authentic taste of Amritsar street food.

The fragrance of Dhabas on Amritsar streets, the traditional interiors and exteriors like ‘kandil’ lamp, grass huts and large brass lassi glass among others take the food connoisseurs to another level. Replete with desi dress for the waiters, the foodies experience the trip through the lush green Punjab.

Chef Sodhi says, “Punjabi dhabas are famous everywhere and this festival is an attempt to present that similar culture in the best possible way. Guests will surely enjoy both the ambience and food in this festival till September 2.” Tempting chilled kesar lassi is served as the welcome drink. The menu includes the snack items like pakora and chole kulcha, which are popular street food or snacks of Amritsar with their authentic flavour.

It is hard to miss the kebabs; kebab tandoori chicken is a tasty appetiser while seekh kebab, made of minced meat, which melted in the mouth and Amritsari Machhli, was crispy batter fried fish, were delicious. All kebabs can be enjoyed with a mint chutney or dhaba chutney which was made up of tomatoes and onion.

When it comes to main course, it would be good to try butter chicken and heavenly chicken gravy, sarson ka saag and makki di roti is the pride of Punjab. One should not miss the all-time favourite traditional dish Punjabi kadhi pakora’s unparalleled taste with rice, dal makhani, Amritsari chole, Aloo gobi. One could try all these curries with tandoori naan and roti.

End the meal on a sweet note with their signature malpua and phirni, heavily garnished with dry fruits, which are too tempting to leave.
